Free time in Barcelona

I suggest you to take a walk through the gothic quarter, maybe visit the boqueria market and the cathedral. I would visit one of the many works of Gaudi in town.

If it is a sunny day I'd choose the Parc Güell, which is a great open sky space full of his works. If the day is cloudy or rainy I would suggest either the Sagrada Familia or the Casa Mila. Both great.

Please think about this before traveling, maybe a week before, and check the weather forecast, you may need to get tickets in advance. Sometimes, specially in high season, it can be difficult to get tickets the same day.

Walking tour in the market

The day starts with a walking tour in the market, where we would buy some of the ingredients we would be using in the class and then, we would head to the Gastronomic Club located in the Old Town of San Sebastian. We would open a nice bottle of wine and would start the class. Let me tell you the class is quite informal, as you would be cooking in the same kitchen as the chef, and could be as participative as you want.

The traditional menu is based in some appetizers you will buy in the market and will prepare and eat while cooking, Lobster Rice, Hake fish with clams and cheeks and a Pantxineta (almond and custard dessert), all paired with wine, or beer or whatever you fell like drinking.

Our private cooking class happens in the most important and well known Gastronomic Club of San Sebastian, temple for toddies and where my partner Jon is a member, so Ihe can grant access for you to make a wonderful cooking class with a professional chef. The chef worked in Michelin starred restaurants in the past and has got a big knowledge of the traditional Basque cuisine, so you will be in good hands!

EASY HIKE IN THE BASQUE HIGHLANDS

A short drive away from San Sebastian a landscape of rolling hills, bucolic farms and sheep unfold before your eyes. Suddenly the pace of the city stops and the heartbeat of the Basques marks its pace. The smell of cheese lingers in the air while we drive through these little towns filled with farms. Our day begins in one of the most spectacular natural parks of the Basque Country.

A light and easy trek in this amazing setting, following a famous trail that was built by the roman and later used by the royals to cross the borders in the past centuries. We will reach the tunnel of Saint Adrian where there are still the remains of the ancient toll to pay for the goods you brought. Today it is considered part of the Saint James way.

IDIAZABAL CHEESE MAKING FARM

We will make our way to a real sheep farm, located in the rolling Basque hills, to taste and learn about one of the culinary icons of the area, Idiazabal cheese.

ENEKO, sixth generation cheese maker, opens his farm and heart to us. His eyes and smile tells us he is quite happy following the family tradition. You will step back in time while you visit this 17th century old farm and taste its award winning cheese.

LUNCH IN A GOURMET VILLAGE RESTAURANT

How do we end a perfect day? Eating. We have hand picked the best local spots, where the local products will be the finishing touch. Just because we are deep in the valley doesn’t mean they don’t know what fine dining is. You are in for a treat!

The indigenous Basque Pig, EUSKAL TXERRI

Visit a Basque farmhouse run by the same family since the 16th Century. By the hand of a member of the family,devoted to recovering the indigenous Basque pig, you will learn how those pigs are reared and understand the traditional role of these self-sufficient traditional Basque farms.

These happy pigs are feed in green raigrass pasture, full of white and purple clover, hay and mountain herbs, nettle and Rumex roots and the fruits of our centuries-old native hardwoods.

As founder of Hidden in Spain, I am focused on high quality service. My passion for traveling has taken me to different destinations in America, Africa, Europe and Asia where I have been able to enrich my life with other cultures and people. During these trips I found an uncovered need. Most of the companies offered fixed and preplanned experiences to see the most touristic places everywhere but I was far from discovering the REAL country.

Thatʼs why I started this company, to offer real tailor made tours through Spain and let people discover the country as if they were traveling with a native guy showing them everything, not only the most touristic places but also all those off-the-beaten paths they wouldnʼt see if no one tell them about and the way people live in this wonderful country.

I also love skiing, watching sports, talking to friends (I mean real chats, not through social media), reading books and spending time with my wife and kids.

My other passion is marketing. Thatʼs why I have a bachelor in advertising and public relations and a Master in Marketing Management. I also got my Master in International Sales, both of them at ESIC in Spain.

And I couldnʼt forget, I am a passionate of beer!!! I love it!! I have tried more than 200 different beers from more than 20 different countries so far!! And counting up…
